After reading “Free” by Chris Anderson, and having been raised on a farm, I found these facts to be fascinating.  In 1955 the average American family spent one third of their annual income on food.  Now we only spend about 15%.  Even more fascinating is that poverty once produced hunger; today it produces obesity—especially among our children.

There has been a complete shift from hunger to obesity.  This dramatic change is due primarily to the progress that has come about in the world of agriculture.  Fertilizer once came only from animal manure.  Half of the land was needed to grow the live stock to produce the fertilizer.  With the innovation of technology, we now produce a byproduct of animal waste—ammonia and nitrogen.  This byproduct is more economical than keeping a herd of cows or 10,000 chickens, so farmers now produce more food at a cheaper price than ever before.

In the world today we are always changing, so as Gandhi once said, “Be the change you want to see.”
